Hi David,
I custom built my workstation on August 2018, focusing on performance and bottlenecks. Take into consideration that I do trading, code Apps in several langs (Java, PHP, MySQL, JavaScript), do a lot a photo and video editing and last but not least : I needed it to be 100% Mac OS X compatible to boot natively Mac OS X High Sierra, Win 10 and Ubuntu Linux 18 ... Here is my shopping list :
3x Dell UltraSharp U2415 screens
2x WD Blue 2TB (5400 rpm, SATA 6 Gb/s, 64 MB caché)

You can use standard 24-27" monitors with no color gamut color calibration and they will be much cheaper.
Total Budget around $2,000 (Computer $1250 - 3 monitores $750) ...
Total Screens available 5 .... Motherboard have another HDMI output that totally works on Ubuntu and Windows10
Boot : Clover + GRUB + Windows Boot Manager on the M2 PCIe 512GB disk .... another M2 disk can be added for RAID and ultra perfance, but no needs for trading
PS : I was using a 9 years old iMac 27" 2.4Ghz with 1x HDD + 1x SSD and the improvement has been huge .... GPU is amazing and now it is cheaper bc RX590 just got out a couple of months ago.
